58 acres of pasture on the Margaret River were purchased in 1995 and reafforested with flowering eucalypt windbreaks. Over 4 years the soil of an 11 acre paddock was improved under strict organic principles before planting the Tuscan olive varieties (Frantoio, Leccino, Pendolino) and Western Australia’s own Mission variety in the spring of 2000.
Green manure crops, composts and animal manure continue to improve soil structure and fertility and assist weed control. No synthetic chemicals are used. Natural biological processes are used to control pests.
Olives are harvested from the trees, at optimum ripeness, in the month of June and cold pressed without delay, to produce a fruity, fragrant, pungent extra virgin olive oil. Allowed to settle naturally in stainless steel tanks at controlled temperatures, the unfiltered oil retains all its polyphenols which provide valuable anti-oxidants.
In 2004 the first commercial Zephyr harvest and pressing was celebrated with an award winning certified organic extra virgin olive
oil and the success continues.
